This role is for a highly skilled baker who is equally comfortable stepping into a chef-led kitchen environment when needed. Someone agile, creative, and excited by change, not just following a set product list, but helping shape it.
The inspiration for the space is bakery-led, produce-driven, informal but exceptional. Quality without stiffness. Craft without ego.
The Role
At its core, this is a bakery-first position, covering:
Bread (mixing, fermentation, shaping, baking)
Viennoiserie (from-scratch lamination)
Cakes, cookies & sweet baked goods
But (and this is essential), there may be periods where the bakery output is quieter, and during those times you’ll work alongside the kitchen team, supporting the delivery of menu dishes and service.
This isn’t a compromise role. It’s a deliberate hybrid for someone who enjoys breadth, pace, and variety.
What You’ll Be Doing
Bakery & Pastry
Producing bread, viennoiserie, cakes, and cookies to a high standard
Working from scratch, with a strong understanding of process and technique
Contributing creatively to a regularly changing product line
Helping shape what great looks like as the concept develops
Kitchen & Service Support
Working alongside chefs when required to support menu execution
Bringing strong kitchen fundamentals: prep, service flow, cleanliness, organisation
Adapting quickly between production and service environments
Culture & Mindset
Thriving in a concept that is still being built
Being solution-focused, flexible, and collaborative
Taking pride in craft while staying commercially and operationally aware
About You
An experienced baker with confidence across bread, pastry, and viennoiserie
Comfortable with from-scratch lamination
Curious, creative, and happy to evolve menus and products
Kitchen-capable; you don’t need to be a Head Chef, but you do need solid chef fundamentals
Calm under pressure and adaptable in fast-changing environments
Excited by ambiguity and building something new, rather than walking into a finished system
