We are looking for a passionate and experience night Baker to join the bakery team at Boxcar Marylebone.
This is an exciting opportunity for an experienced professional with strong expertise in bread production, sourdough, and viennoiserie. We are particularly seeking someone confident in double lamination techniques, fermentation management, and producing consistently high-quality baked goods in a fast-paced, quality-driven environment.
You will be part of an ambitious bakery operation where craftsmanship, creativity, and continuous development are at the heart of everything we do, working closely with the Executive Chef, the Head Group Baker and the Head Baker.
This is a night-based role, ideal for bakers who enjoy a focused production environment and take pride in delivering exceptional products ready for the day’s service.
The Role
As an Experienced Baker at Boxcar Marylebone, you will play a key role in daily production, taking ownership of bakery sections and maintaining the highest standards of quality, consistency, and presentation.
You will be responsible for producing artisan breads, sourdoughs, viennoiserie, and laminated pastries, ensuring excellent execution across all stages of production. Working closely with the wider bakery team, you will contribute to product development, operational excellence, and the continued growth of the bakery.
This is a hands-on position suited to someone who thrives at the bench, enjoys working collaboratively, and takes genuine pride in their craft.
Key Responsibilities
Bakery Production & Craft
Produce high-quality artisan breads, sourdoughs, viennoiserie, cakes, and pastries
Demonstrate advanced knowledge of fermentation, dough handling, and proofing
Execute laminated pastry production to a high standard, including double lamination techniques
Manage production schedules to ensure consistency and efficiency
Maintain exceptional standards of quality, presentation, and attention to detail
Support innovation and continuous improvement across bakery products
Creative Development
Contribute ideas for new products and seasonal offerings
Collaborate with the Head Group Baker and the Head Chef on recipe development
Stay engaged with current bakery trends, techniques, and customer preferences
Help evolve and refine the bakery’s product range
Collaboration & Leadership
Work closely with the Head Group Baker and the Head Chef and wider kitchen team
Communicate effectively across shifts to ensure smooth operations
Support and mentor less experienced team members when required
Foster a positive, professional, and collaborative working environment
Standards & Operations
Uphold the highest standards of food safety, hygiene, and organisation
Take ownership of your section and production responsibilities
Demonstrate a proactive, flexible, and solution-focused approach
Ensure consistency in quality, process, and output across all products
What We're Looking For
Proven experience as a professional baker in a high-quality bakery, restaurant, or production environment
Strong expertise in artisan bread and sourdough production
Advanced viennoiserie skills, including double lamination
Excellent understanding of fermentation, dough development, and pastry techniques
Strong organisational skills and attention to detail
A passion for quality, creativity, and continuous improvement
Ability to work independently and as part of a team in a night-shift environment
